Easy Bread Pudding

This bread pudding recipe is great for several reasons. It is easy to make, it tastes great, and the ingredients are something that you usually have on hand at the house. If you're in a pinch and need a great dessert, this is your answer.

8 slices bread (peel off crust and break up into bite size pieces)
2 eggs slightly beaten
2 cups milk
1/4 cup margarine
1/2 cup sugar
1 tsp. cinnamon or nutmeg
1/4 tsp. salt
1/2 cup raisins (optional)

Heat oven to 350 degrees.
Heat milk and margarine over medium heat stirring constantly; do not scorch. Mix eggs, sugar, cinnamon, and salt in large bowl. Stir in bread and optional raisins. Pour in milk and margarine mixture and mix together.

Use 1-1/2 quart ungreased casserole dish. Place casserole in hot water (in another baking dish) and place in oven. Bake uncovered 40 - 45 minutes or until knife comes out clean.

Serve warm or cold.
