Quick and Easy Piggies

I have always loved piggies, but I must confess that I didn't love making them. They are much too time consuming. This recipe, however, is a wonderful "shortcut", and they taste great, too!

They go well with mashed potatos or homemade mac & cheese. Give them a try - you'll be really glad you did!

3 lbs. ground beef
1/2 cup cooked rice
2 eggs
Salt and pepper
Chopped onion

Mix all together in large bowl. Shape into meatballs. Place in a 13 X 9 baking dish. Cover with shredded cabbage (approximately 1/2 head).

THEN POUR OVER

1 can crushed tomatoes (28 oz)
1 can cream of mushroom soup
1 can tomato soup OR 8 oz. can of tomato sauce

Cover and bake for 2 hours at 350 degrees.
