Great Recipes for Country Baking and Cooking
Are there recipes that you hold dear? I'm sure there are - below is one of my favorites.
I have a fondness for this cake because it reminds me of Christmas when I was growing up. Right before Christmas every year, my Mom would make this wonderful cake.
The excitement of Christmas would build for me because the sight and smell of this cake meant Christmas morning was getting closer and closer.
My Mom still makes this cake at Christmas time every year. She also faithfully makes it for her brother-in-law before he and my aunt head off to Florida for the winter. He just loves this cake.
Don't get me wrong, this cake is to be enjoyed all-year-round, not just for the holidays.
Bake one, and then invite some family or friends over to share it. Enjoy!
GRANDMA SCOTT'S BOILED RAISIN CAKE
2 cups sugar
1 lb raisins (large ones)
3 cups water
1 tsp. cinnamon
1 tsp. cloves
1 tsp. salt
1 cup margarine
Put in sauce pan and bring to a boil for 10 minutes. (then cool)
Then add,
3 cups flour
2 tsps. baking soda
Spray a 13 X 9 inch cake pan. Bake at 350 degrees for 30 - 35 minutes or until toothpick comes out clean.
