Try These Wonderful Zucchini Recipes


I hope that you get a chance to give one of these zucchini recipes a try. Hopefully, all three - I'm sure that they'll be loved by anyone you happen to serve them to.






CHOCOLATE ZUCCHINI CAKE

1/2 cup butter or margarine, softened
1/2 cup vegetable oil
1-3/4 cups sugar
2 eggs
1 tsp. vanilla extract
2-1/2 cups all-purpose flour
1/4 cup baking cocoa
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. ground cloves
1/2 cup sour milk *
2 cups shredded peeled zucchini
1/2 cup semisweet chocolate chips

In a mixing bowl, cream the butter, oil and sugar. Beat in the vanilla and eggs. Combine flour, cocoa, baking soda, baking powder, cinnamon and cloves; add to the creamed mixture alternately with milk. Mix well. Stir in zucchini. Pour into greased 13 X 9 cake pan. Sprinkle the chocolate chips on top. Bake 350 degrees 40 - 45 minutes or until toothpick comes out clean.

*Sour Milk Put 1-1/2 teaspoons white vinegar in a measuring cup. Add milk to equal 1/2 cup


ZUCCHINI CAKE

2-1/2 cups all-purpose flour
2 cups sugar
1-1/2 teaspoons cinnamon
1 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1 cup vegetable oil
4 eggs
2 cups shredded zucchini
1/2 cup chopped walnuts (optional)

In mixing bowl, combine flour, sugar, cinnamon, salt, baking powder and baking soda. Combine oil and eggs; add to dry ingredients and mix well. Add zucchini; stir until combined well. Mix in walnuts (if you choose). Pour in greased 13 x 9 cake pan. Bake 350 degrees for 35 - 40 minutes or until toothpick comes out clean. Allow to cool then frost.

FROSTING

1 pkg (3 oz) cream cheese, softened
1/4 cup butter or margarine, softened
1 tbsp. milk
1 tsp. vanilla
2 cups confectioners sugar
Additional chopped nuts (optional)

Beat cream cheese, butter, milk and vanilla until smooth. Add confectioners sugar and mix well. After frosting cake, sprinkle with nuts (optional)


CHERYL'S ZUCCHINI BREAD

3 eggs
1 cup vegetable oil
2-1/2 cups sugar
2 tsps. cinnamon
1 tsp. salt
1/4 tsp. baking powder
1 tsp baking soda
3-1/2 cups flour
1 cup chopped nuts (optional)
2 cups shredded zucchini

Mix eggs, oil, and zucchini. Add sugar, cinnamon, salt, baking powder, and baking soda; mix well. Stir in flour. Add (optional) nuts.

Bake 350 degrees for 50 - 60 minutes in loaf pan.

VARIATION

Replace 1 cup oil with 1/2 cup orange juice and 1/2 cup oil.
Use only 2 cups sugar.
Add 1/2 tsp. ginger and 1/2 cup coconut.
